The Best Lazy, Low Carb Lasagna (2 Ways)

When you’re mindful of the type of carbs you eat but you don’t want to cook separate dinners for yourself and the rest of the family. I feel ya! My boys like their pasta but I’m limiting grains for better digestion and bloating.

My strategy with any dinner is to build the meal around the main protein that we will all be eating, then I switch the carbs to suit the rest of us. For lasagna night, I build two meals out of one star ingredient, my meat sauce. I make one Lazy, Low Carb Lasagna with zucchini chunks (sometimes I don’t even spiralize or mandolin it, but you could!) and the boys have pasta. Easy. I always say it’s all about the sauce anyway. 

 All it took was me boiling an extra pot of noodles for the boys’ meal, but I also could have used “oven-ready” to speed up the process even more. 

Here is how I built the Lazy, Low Carb Lasagna: (note: this is the “lazy” version, so you can be loose with your measurements!).

For the sauce:

In a deep pot, warm up some olive oil or ghee

Sautee 1/2 diced onion, until translucent

Add in 2-3 cloves minced garlic

Cook in 1 package ground lean meat of choice (I always use turkey), until browned

Stir in 1 jar prepared pasta sauce, and any additional herbs, like basil, oregano, and parsley

Reduce heat to simmer and let cook for 1/2 hour to 3 hours (I always start my sauce early in the day and let it cook for hours)

For the cheese mixture:

In a medium stainless or glass mixing bowl:

Stir together 2 heaping handfuls of raw spinach (chop first if you prefer), and 2 cups cottage cheese

Add sea salt and pepper to taste

Other additional options are 1 egg, parmesan cheese, or use ricotta cheese in place of cottage cheese (or do a combo of both!)

Build the lasagna (Roll-up style)

Use a mandolin and slice a medium-sized zucchini into very thin strips, lengthwise

Slather some cheese/spinach mixture onto each slice and roll it up. Place each one standing upright into a 6×9 inch baking dish

Fill in all the gaps with meat sauce

Top with parmesan cheese or omit. Either way, it’s delicious

Bake at 375F for 30 minutes

Serves 2

Build the lasagna (Lazy style)

Slice a medium-sized zucchini in 1/2 inch rounds, then quarter each round into 4 chunks

Place them all in the bottom of a 6×9 inch baking dish

Spread a generous layer of the cheese/spinach mixture over zucchini pieces

Spread a generous layer of the meat sauce on top of cheese mixture

Garnish with parmesan cheese

Bake at 375F for 30 minutes

Serves 2
