Easy 4 Ingredient Granola Cereal Cookies

A box of unopened granola cereal was the inspiration for these cookies. Let me preface by saying that I do not claim to be a baker in any way, so there could be an important ingredient missing from a traditional cookie recipe….but, what I put together here worked, so I’m going with it!

What I love about this recipe

  • Prep time is about 5 minutes
  • The granola is already made…just pour it in! I used Innofoods Almond Fruit Crunch that I found at Costco Canada with a nice blend of nuts, seeds, oats, and dried fruit. You can absolutely make your own or use another brand
  • The healthy fats in the nuts, seeds, and nut butter are what we need for glowing skin and hormone balance
  • They provide some great energy as a breakfast or pre-workout snack

What you need to make the cookies

  • Large baking sheet or 2 smaller ones
  • Parchment paper, if your sheet is not non-stick
  • Mixing bowl
  • Measuring spoon and cup
  • Food processor or knife and cutting board
  • 2 cups prepared granola cereal
  • 1 cup almond butter (other nut butters will probably work!)
  • 1 egg
  • 2 tablespoons honey
Spoon and flatten 15 cookies on to baking sheet

The method

  • Preheat oven to 350F. Prepare your baking sheet with parchment paper, if needed, and set aside
  • Pulse your granola (apron 5 times) in a food processor until it is in small pieces and when it reaches the consistency that you prefer. I like chunky, crunchy cookies, so I kept my granola still somewhat clustered. Set aside.
  • In a mixing bowl, combine almond butter, egg, and honey. Mix well.
  • Add granola to the almond/egg mixture and stir until everything is coated well. This can be a little work if using a spoon, so feel free to get in there with your hands
  • Spoon the mixture onto your baking sheet, leaving about an inch between each cookie. I managed to distribute the mixture into 15 cookies perfectly
  • Gently press down each cookie with a fork and use your fingers to tuck in any loose bits
  • Bake for 12 minutes or until you see the edges just starting to brown
  • Let cool completely so that they harden up a bit before eating
